Fat Affects Antioxidant Protection

Fats present in the stomach may reduce the protective effects of antioxidants.

Scientists at the University of Glasgow found that in the presence of fats, the ability of antioxidants, such as ascorbic acid (vitamin C), to protect against potential cancer-forming compounds in the stomach is less than when no fat is present.
